The blackthorn (Prunus spinosa), also known as sloe, is a natural spectacle: when it is covered in countless white blossoms in March and April, it looks as if it has been snowed on again. At the same time, it is one of the most valuable bee food sources in spring and offers many bird species shelter and protection in its dense, thorny branches.

The small blue fruits ripen in late autumn – it is best to harvest them after the first frosts, as cold makes the sour sloes milder. Alternatively, simply freeze them for a few days. Then they can be used to make juice, syrup, jelly or a delicious sloe liqueur.
