The elder (Sambucus nigra) is a true all-rounder: its flowers can be baked or processed into delicious elderflower syrup – and as a tea, they have been used for centuries against fever and colds. The ripe berries (cooked!) are rich in vitamins A, B and C as well as potassium and are excellent as juice or jelly.

No wonder that elder was once said to have magical powers: it is one of the oldest cultivated and medicinal plants in Europe, its berries were used for dyeing and it is considered a sacred plant from pre-Christian times. At the same time, it is an important forage plant for bees, butterflies and birds.
